Course Outline: Human Nutrition and Metabolism

The Human Nutrition and Metabolism course introduces students to the biochemical, cellular, and molecular mechanisms governing the interaction between food components, bioactive ingredients, the gut microbiota, and metabolic physiology.
The syllabus covers digestion dynamics, bioaccessibility, epithelial transport mechanisms, intestinal barrier integrity, as well as nutrient-sensing networks and transcriptional factors regulating tissue metabolism. Additionally, it examines in depth the enzymatic activities, fermentative pathways, and substrate biotransformations mediated by the gut microbiome, combined with the application of modern experimental models (in vitro digestion, chromatographic profiling) and bioinformatic tools for metabolic data analysis and bio-evaluation.
