“The training seminar for primary school teachers was successfully completed on Friday 1/11 as part of the “Karava Project – School Gardens” project, which aims to create model school gardens in the Karditsa Regional Municipality and to educate, raise awareness and mobilize students in the principles of sustainability, sustainable rural development, food production and processing, healthy eating, recycling and environmental protection.
The Department of Food Science and Nutrition of the University of Thessaly is participating voluntarily in the program, along with many other organizations in the region.

We are excited and thankful for the opportunity to present our recent research at the EFFoST 2024 conference in Bruges, Belgium (12-14/11/24)! It was an incredible opportunity to share insights on recent developments in global research in Food Science and Technology and engage in stimulating discussions with representatives of academia and the industry. The following oral and poster presentations were presented by the Department of Food Science and Nutrition, University of Thessaly.

The Head of the Department Dr. Ioannis Giavasis had the honor to present part of his research, on the prebiotic effects of olive polyphenols, the use electrostimulation in the cultivation of probiotics and the isolation and characterization of bacteria with probiotic potential from naturally fermented Greek yogurt, during the IPC 2024 International Conference on Probiotics, Prebiotics, Gut Microbiota and Health, which took place on 18-20/7/24 in the beautiful city of Prague. It was a great opportunity for disseminating the work of the Department and the Lab of Food Microbiology and Biotechnology, meeting excellent colleagues in the field and paving the way for future collaborations.
Ms. Konstantina Kotsou, PhD candidate of the Department of Food Science and Nutrition successfully presented the paper entitled “Utilization of Spent Coffee Grounds as a Feed Additive for Enhancing the Nutritional Value of Tenebrio molitor Larvae” at the 5th International Conference “Insects to Feed the World (IFW)” on June 19, 2024 in Singapore, representing the Department at an important international conference on the use of insects in food and feed.
